Chocolate Espresso Fudge (Made with local decaf coffee)

Chocolate Espresso Fudge

Valentine’s day is coming up right around the corner, so I thought that I would share with you one of my favorite heathy fudge recipes using decaf expresso coffee made by local Portland Coffee company, “Coffee by Design.”

Ingredients:
1\2 cup nut butter (peanut, cashew, or almond)
1 1\2 cups organic chocolate (or grain sweetened carob) chips
3 T fresh ground decaf expresso
Optional toppings to press on top: slivered almonds, chopped walnuts, juice sweetened cherries or cranberries, unsweetened coconut

Combine the nut butter and the chocolate chips in a double boiler and stir constantly over medium heat until melted. Remove from heat and add the fresh ground expresso. Line a small baking dish dish with wax paper and pour the fudge into the pan. If desired, you can sprinkle optional toppings on the top and put into the refrigerator for half and hour. Slice and serve.

Tip: I find it easiest to cut squares if you place a plate on top of the pan and flip it over so that the block of fudge lands on the plate. After you have cut the fudge into squares, you can place the pieces in mini valentine’s baking cups (muffin liners) or in small decorated boxes with colored paper.
